Chocolate and peppermint is such a divine combination. Don’t you think?
And what can be cuter than some yummy cupcakes!

Plus for the past two weeks the universe has been sending me signs (ever since I read The Alchemist – which was years ago – I keep looking for signs! But only the fun ones. I don’t, of course, believe in Prof Trelawney’s ‘Grim’ version of fortune telling.)

Anyway lemme tell you what the signs were and you can judge for yourself.

1st sign from the Universe: I lunched at The Sassy Spoon a couple of days back (The food was to die for!). My friend ordered a chocolate brownie which came with their in-house basil icecream. Now I know basil isn’t mint. But both are green. Aren’t they?

2nd sign from the Universe: When I had been to Pune for the weekend I went to Copacabana. With the check they served us some lovely dark chocolates (Just the color made me drool) accompanied by Polo mints. Again mint and chocolate.

So it was unmistakeable. When the entire universe had conspired to help me bake chocolate cupcakes with peppermint frosting, who am I to refuse!

Chocolate cupcakes with peppermint frosting

yields 8 cupcakes

Ingredients:

1 and a 1/2 cup flour
2 eggs
3/4th cup butter
1 and a 1/2 cup powdered sugar
1 and a 1/2 tsp baking powder
2 heaped tablespoons cocoa powder
1/2 cup milk
A hint of vanilla
A pinch of salt

Method:
1. Cream the sugar, butter and vanilla till it looks like whipped cream.
2. Add boiling hot water to the cocoa powder and beat till it forms a paste. Set aside.
3. Mix baking powder, salt and flour together and set aside.
4. Alternate between adding flour, eggs and milk to the creamed butter. Add the cocoa mix and beat till a homogenous batter is formed
5. Pre-heat the oven to 180 degrees.
6. Drop dollops of batter in cupcake moulds till about 3/4th full.
7. Bake for 15-20 mins till the toothpick test comes positive

Peppermint frosting 1

Ingredients:
1 egg white
3/4 cup sugar
1/2 tsp peppermint essence
1 tablespoon water
Hint of vanilla essence
Food colour

Method:
1. Mix all ingredients in a bowl.
2. Bring to boil a saucepan full of water.
3. Place the bowl in the saucepan and beat for 7 mins.
4. Remove the bowl from the hot water and continue to beat till the icing peaks.

Peppermint frosting 2 (Easy buttercream)

Ingredients:
Butter
Powdered sugar
1/2 tsp peppermint essence
Hint of vanilla essence
Food color

Method:
1. Mix all ingredients till smooth.
2. Eat a spoonful (Just cause it’s yum!) and it’s ready!
